Fill The Freezer

Tis the season to stock my freezer, fa, la, la, la, la, la, la, la, la...



There is nothing more comforting and reassuring (to me anyway) than a freezer full of goodies and inspiration.


The other week driving home ravenous from a long morning at the beach my husband asked me the dreaded question of 'so whats for lunch' and I was NOT prepared at all! Fortunately we passed a McDonalds on the way home so I managed to dodge it this time but from now on I vowed to be more prepared!


I started off with freezing a load of sandwiches. Sounds strange I know but trust me, it's a life saver. I put aside half an hour of my day to make some delicious sandwiches that future Natalie would definitely be grateful for. You want to choose sandwiches without any salad in as these don't freeze well however you can add lettuce and things once

defrosted/cooked.



I started off with making some cheese & ham sandwiches which I can pop in the toastie maker or the grill straight from frozen, perfect! I also had a couple of croissants I needed to use up so I also made up a few cheese & ham ones too. I roasted a chicken the previous day so I made up a few chicken mayo sandwiches too! These I can take out and leave for a few hours to defrost or they would still be delicious toasted too! To stop the sandwiches going soggy when defrosting, pop some kitchen roll round them and it will absorb any excess moisture!



When it comes to freezing them, they need tightly wrapping in cling film/parchment paper/sandwich bags and they will keep nicely in the fridge for up to 3 months!




My favourite thing to load the freezer with is stock! I have started making it in the slow cooker and it's a game changer. I'll link the recipe here if you want to give it a go! And with this stock I have frozen lots of individual bags of chicken noodle soup! Using the chicken that I made the stock with and lots of broken up spaghetti! I now feel prepared for the first inevitable cold to enter our home!



Moving on to the sweet treats! The freezer is now well stocked with chocolate brownies (recipe coming soon!) Chocolate Chip Cookie Dough all ready in little balls to be placed in the oven at a moments notice when a warm cookie is needed and I have made up a crumble too ready for a super fast dessert for us to all enjoy one evening!
