Parsnip & Apple Soup

Possibly my new favourite soup! I knew it would be pretty yummy but it surpassed my expectations and Sofia after trying a little bit from the pot asked for a bowl of it right away! So as you can imagine I was pretty pleased that it had her seal of approval!!

I used chicken stock in this recipe but you could use vegetable if you are a vegetarian just make sure you have enough to cover all your veg so that it all boils nicely!
