I am actually surprised by how light these really are especially considering that there's cheese inside! You can make these as spicy as you like, I'm a bit of a wimp so I use mild Jalapenos and I dice them really small but you can do what suits you. As for the cornmeal, most supermarkets sell this in the world food aisle and you can choose to use more or less of this as you please as long as you stick with having 500g of flour overall!
