Banana Pancakes

The only thing better than a pancake is a banana pancake (I actually disagree but my kids would pick banana ones every time!)

These are perfect for using up those brown bananas lingering in your fruit bowl and are perfect to freeze ready for a quick breakfast on a school morning or preparation for a yummy feast at the weekend.

Either leave them on the side overnight or pop them in the microwave frozen for about 10 seconds or until defrosted!

I often get asked why I don't add sugar to my pancake mix and that is because if you're adding a sweet topping then you wont miss the sugar in the pancake however a splash or vanilla or of almond extract (always use extract not essence) wont go amiss!
